The quintessential Australian sparkling red!

The palate is an explosion of chocolate, mint, ripe berries and star anise.  The wine is deftly balanced by the dosage liqueur with fine velvety tannins adding structure length and persistence to the finish. Small amounts of older vintage material add complexity and gravitas.  Twelve months on yeast plus time in the bottle contribute to the rich savoury spice, leather and earthy notes.

“The distinctly black pepper fingerprint of the Mount Avoca vineyard in the Pyrenees is the hallmark of its characterful sparkling shiraz.  With no oak to speak of, fruit is the focus here, and five years on lees has built a toastiness that gives the impression of oak.  Core of satsuma plum skin and blackberries.  Wonderful fine-grained fruit tannins.”
